MOCK SOUR CREAM 
2 tbsp. lemon juice
1/4 c. skim milk
1 c. cottage cheese
Pinch of salt

Place lemon juice and milk in blender; gradually add cottage cheese and salt. Blend a few minutes on high speed until smooth. If mixture thickens on standing, thin with additional milk.
