SPINACH MUSHROOM QUICHE 
4 eggs
3/4 c. heavy cream
3/4 c. milk
1 tbsp. flour
2 tbsp. melted butter
Dash salt, pepper and nutmeg

Mix above ingredients with wire whisk.

FILLING:

10 oz. frozen chopped spinach

Cook, drain thoroughly, getting out all water of spinach. Mix with:

1/4 tsp. salt
1 tsp. horseradish
4 tbsp. sour cream
Dash pepper

Grate:

3/4 c. Swiss cheese
3 tbsp. Parmesan cheese

Saute:

10 or 12 med. mushrooms, sliced

Spread spinach mixture on pie shell, sprinkle both grated cheeses over top. Sprinkle mushrooms over evenly and then pour custard over all. Bake at 350 degrees to 375 degrees for 40 minutes or until golden brown and center is solid.
