CHEDDAR CHEESE AND MUSHROOM
QUICHE
 
1 unbaked 9 inch pie shell

Cover bottom of crust with 1 1/2 cups grated cheese. Cover cheese with 1 medium onion chopped and 1/4 pound mushrooms sliced that have been sauteed in butter with salt and pepper.

Beat together:

4 eggs
1 1/2 c. milk
3 tbsp. flour
1/4 tsp. salt
1/4 tsp. dry mustard

Pour custard over mushroom layer. Sprinkle with paprika. Bake at 375 degrees for 40-45 minutes or until solid in the center jiggled.

Variations: Substitute Swiss cheese for Cheddar. Use fresh tomato slice instead of mushrooms (tomatoes don't need to be sauteed first). Add 1 teaspoon horseradish. Substitute 1 cup scallions for the onions.
