MEATLOAF WITH CHEESY CENTER 
2 1/2 lb. ground beef
1 1/3 cups milk
2 1/2 tbsp. Worcestershire sauce
1 tsp. dried sage leaves
1 tsp. salt
1/2 tsp. pepper
1 tsp. ground mustard
2 cloves garlic, finely chopped
2 large eggs
1 sleeve saltine crackers, broken up
1 medium onion, chopped
7 slices block sharp cheddar cheese

Preheat oven to 350°F.

In a large bowl mix all ingredients except for the cheese.

Spread half of the mixture into a 13x9-inch pan, forming into a loaf. Press gently down on the center of the loaf to form a dip in the loaf, place cheese slices in this dip. Take remaining mixture and place on top of loaf and make sure all the cheese is covered and there are no open edges (this is so the cheese doesn't melt out).

Bake uncovered at 350°F for 1 hour to 1 hour 15 minutes. Insert a meat thermometer, center should be 160°F. Let stand for 5 minutes then remove from pan.
