ERICH'S BBQ MEAT LOAF
This always comes out great and my wife loves it!! Serve with potatoes and a salad.

2 lb. ground beef (or 1/2 venison and 1/2 ground beef)
1 large yellow onion, chopped
1 large green bell pepper, chopped
2 cloves garlic, minced
1 cup bread crumbs
1 (16 oz.) bottle your favorite BBQ sauce
1 tsp. ground cumin
salt and pepper, to taste

Preheat oven to 400°F.

Combine 2 pounds of meat with chopped onion, bell pepper, minced garlic, bread crumbs, cumin, salt/pepper and 1/2 bottle of barbecue sauce in a bowl. Mix together thoroughly and form into a loaf.

Note: You may need to add more bread crumbs depending on how the loaf forms. You can use a loaf pan but I always use my broil pan to keep the meat loaf from floating in the grease!!

Form into loaf on pan and cover the top with barbecue sauce and 3 slices of onion.

Bake at 400°F for 1 hour.

Serves 4 to 6.
