“LEISHA'S EASY MEATLOAF” IS IN:

LEISHA'S EASY MEATLOAF 
2 lb. ground beef
1 small onion, diced
2 slices of bread or 1 cup bread crumbs (any flavor; I like garlic or Italian)
1/2 cup uncooked rice
2 eggs
2 tbsp. Worcestershire sauce
1 (15 oz.) can tomato sauce, divided (Hunts)
salt and pepper, to taste (optional)
garlic powder, to taste (optional)

Preheat oven to 350°F.

Add ground beef into mixing bowl. Add diced onion. Tear up 2 slices of bread into small chunks or add the bread crumbs. Add the rice and eggs. Add the Worcestershire sauce. Add 3/4 can of tomato sauce. Add salt, pepper and garlic powder to taste (if using).

Make sure your hands are washed and then mix the ingredients by hand until it is thoroughly mixed. Shape the meatloaf and place into a metal or glass loaf pan. Pour the remainder of the tomato sauce on top of the meatloaf.

Cover with foil and bake at 350°F for 60 to 90 minutes or until meat is thoroughly cooked.

Variations: Can substitute tomato sauce for ketchup if needed. Can also add diced bell peppers and/or chives, if desired.
