MY MEATLOAF | |
2 lbs ground beef (lean is best, you can also use turkey) 1 cup bread crumbs (crushed stuffing works wonders) 2 eggs 1 tsp. sage 1 tsp. celery salt 1 tsp. granulated garlic 2 tsp. parsley 1 pkg. onion dip or soup mix (you can use 2 tbsp of onion powder or dehydrated onion in place of dip mix) 1 can cream of mushroom soup 1 1/2 cups grated cheddar cheese 1/2 cup ketchup In a large bowl mix beef, bead crumbs, eggs, sage, celery salt, garlic, parsley, onion mix, cream of mushroom soup, and 1/2 cup cheese. Mix very well. Transfer mixture to a greased loaf pan, pour ketchup on top and cover with remaining cup of cheese. Bake at 350°F for 1 1/2 hours on middle rack. You may want to put loaf pan on a cookie sheet to catch drippings for easy cleanup. Ovens vary so check after 1 hour. Side dish suggestions: Baked Potatoes - if you put in 15 or 30 minutes (depending on size) after meatloaf they will be done at the same time. My Husband loves this meatloaf!
