HOMESTYLE MEATLOAF 
MEATLOAF:

2 lbs. ground beef chuck
1 1/2 cups oatmeal
3 or 4 cloves garlic, crushed (depends on how much garlic you like)
2 tbsp. tomato paste
2 tbsp. ketchup (Hunts)
2 tbsp. Worcestershire sauce
2 tbsp. parsley, dried or fresh
1/8 tsp. ground mustard
2 eggs
1/4 cup carrot peels, chopped
1/8 tsp. ea. salt and pepper
1 small onion, chopped

TOPPING:

1/2 cup ketchup
1/4 cup brown sugar
1/8 tsp. ground mustard
1/8 tsp. garlic powder
1/8 tsp. ea. salt and pepper

Preheat oven at 350°F.

In a large bowl incorporate all meatloaf ingredients, and mix, but do not over-mix (makes meatloaf mushy).

In a 13x9-inch glass baking dish place meatloaf and form into rectangular shape. I like to make 3 slits on the top of the loaf, it helps with the cooking time (and doesn't dry out the meatloaf).

Bake covered at 350°F for 55 to 60 minutes. The last 10 minutes uncover and drain liquid from meatloaf and brush meatloaf with the ketchup topping and finishing baking.
