"LATKES" - POTATO PANCAKES | |
8 lg. potatoes 2 eggs 1 lg. onion 2 tbsp. Matzo meal (or flour) Peel, grate, and drain all liquid off potatoes by squeezing out in a towel. Add one large onion that has been grated or pureed in blender. Add 2 eggs, and 2 tablespoons Matzo meal or flour. Form into patties 3/4 inch thick and fry in very hot oil until golden brown. Serve with sour cream, applesauce and butter. They can be held briefly in the oven on a cake rack so they won't get soggy. |
