POTATO PANCAKES (Latkes) 
3 med. sized potatoes
3 whole eggs, beaten well
1 tbsp. flour
1/2 tsp. salt
1 tsp. dehydrated onion
Vegetable oil

Grate potatoes quickly, add beaten eggs and rest of ingredients. Mix well. Make pancakes by taking 1/4 to 3/8 of mixture and fry in small amount of vegetable oil.

Cook over slow fire until potato pancakes are thoroughly browned. Can be served with a sprinkling of sugar, applesauce, sour cream or syrup.

Hint: If worried potatoes will turn brown while waiting to be fried, 1 teaspoon of lemon juice can be added. Serves 4. Enjoy.
