POTATO LATKES (PANCAKES) 
About 3 lbs. potatoes
1 lg. onion
Vegetable oil for frying
2 eggs
3 tbsp. flour or Matzo meal
1 tsp. salt
1/2 tsp. pepper
1/2 tsp. baking powder

Grate (or shred in food processor) potatoes and onions. Drain liquid (use paper towel or sieve).

Return to mixing bowl. Stir in eggs, Matzo meal (or flour), salt, pepper and baking powder. Drop tablespoons of mixture into pan of hot oil until golden (about 4 or 5 minutes per side). Remove and drain on paper towel. Repeat with remaining batter. Serve with applesauce, sour cream or with a sprinkle of sugar.
