LATKES (POTATO PANCAKES) 
1/2 c. vegetable oil
5 lg. baking potatoes
1 med. onion (finely grated)
2 eggs
1 tsp. salt
Dash pepper
1/4 c. matzo meal

Peel potatoes and grate. Add onion, eggs, salt, pepper and matzo meal. Drop by tablespoons into hot oil deep enough to cover pancakes. Fry over medium heat until browned. Turn and brown the other side. Drain on paper towels, changing them frequently to absorb the oil.
