EASTERN SHORE OYSTER FRITTERS 
1 pt. shucked standard oysters
1/2 c. evaporated milk
1 c. pancake mix
1 tsp. salt
2 tbsp. cornmeal
1/4 tsp. pepper
3/4 c. cooking oil

Drain oysters reserving liquor. Put oysters in bowl. Mix in milk. Add pancake mix, cornmeal, salt and pepper. Mix well. (Batter will be thick). Heat oil in 10 inch fry pan. Drop batter into hot oil by tablespoon making sure to include 2 oysters in each portion. Cook until brown on 1 side, for 1 to 2 minutes. Turn carefully and brown the other side. Makes about 18 fritters. NOTE: If batter becomes to thick on standing, thin with oyster liquor.
