EASTERN SHORE OYSTER-CORN FRITTERS | |
1 pt. oysters, drained 3/4 c. liquid 1 egg, just add 2 c. biscuit mix 1/4 tsp. seafood seasoning 1/8 tsp. salt 1/8 tsp. pepper 8 oz. can whole kernel corn In large bowl beat egg. Add biscuit mix, seasonings, corn (drained well), oysters and 3/4 cup liquid from oysters. Stir well. Heat 1-2 inches of oil in large fry pan and drop batter into oil by tablespoon. Cook until brown on one side; turn; brown other side. Yields 20 servings. My father, who was taken out of school when he was in 3rd grade, and put to work on oyster boats, loves these fritters. On my grand-father's death certificate his occupation was Waterman. My father and grand-father were born in Wingate, Md. along the Eastern Shore of Md. |
