VIDALIA SWEET ONION PIE 
1 Unbaked 9 Inch Pie Shell
3 Cups Sliced Sweet Onions
3 tbsp. Butter
2 Eggs (Slightly Beaten)
1/2 cup Evaporated Milk
1 tsp. salt
1/8 tsp. Pepper
1/4 cup parmesan Cheese

Sauté sweet onions in butter until tender. Arrange in bottom of pie shell. Mix beaten eggs with milk, salt and pepper. Pour mixture over onions. Sprinkle with parmesan cheese.

Bake at 425 for 18-20 minutes or until knife inserted in center comes out clean and pie shell is golden brown.

Serves 4-6.
