SWEET BARBECUE CHICKEN WITH
CARAMELIZED ONIONS
 
Makes a thinner but sweet glaze on the chicken, my family loved it. We used the leftover sauce to pour on our mashed potatoes, it was really good!

frozen boneless skinless chicken breasts (1 per person)
4 tbsp. (1/2 stick) butter
honey barbecue sauce (your choice)
1/2 to a whole Vidalia onion, chopped
1 tbsp. brown sugar per chicken breast

SPICE RUB:

4 tbsp. mustard
4 tbsp. white pepper
4 tbsp. salt
4 tbsp. red pepper flakes
4 tbsp. garlic powder
4 tbsp. onion powder

Rub chicken with the spice rub. Sear on regular or George Foreman grill (I did, but you don't have to). Sprinkle a bit more of the rub on the chicken.

Put butter in large skillet and melt. Put chicken in the skillet on medium-low heat for 10 to 15 minutes. Add chopped onions, cook them a bit to tenderize. Sprinkle a tablespoon of brown sugar on each piece of chicken. Pour barbecue sauce on each piece of chicken in the skillet (as much as you'd like), flip once, and pour it on the other side (doing this at the end keeps the barbecue sauce from getting burned). Serve.
