SWEET VIDALIA ONION DIP SPREAD 
2 cups Vidalia
1/4 onion or sweet onion (1 large)
1 3/4 cups Hellmann's Mayonnaise
2 cups grated cheese (sharp Cheddar or Swiss)
paprika (optional)

Mix all ingredients in large bowl. Pour into a glass baking dish (deep pie dish or 8-inch square). Top with a generous amount of paprika (optional).

Bake at 350°F until golden brown on top or bubbly. Cool 3 to 4 minutes before serving. Serve on Triscuits, Ritz chips or Ritz crackers.

May be baked several days ahead, cooled, wrapped in plastic wrap, refrigerated and then reheated in microwave oven until hot.

Since microwave ovens vary in power, you may need to adjust your cooking time.
