SWEET ONION HUMMUS WITHOUT TAHINI | |
Hummus is a highly nutritious, Middle Eastern dish that typically calls for tahini - sesame seed paste that tends to be expensive. The texture and flavor of hummus with tahini is not my favorite, and as a poor college student, I experimented with variations on non-tahini hummus. This one-pan recipe gets its flavor from a blend of caramalized onions, roasted garlic, and herbs. 2 (15 oz. ea.) cans chick peas / garbanzo beans 1/4 cup minced sweet, yellow onion 1 tbsp. minced onion 1/2 tbsp. butter 2 tbsp. olive oil 1-2 tbsp. lemon juice 1/2 tsp. salt several shakes of freshly ground pepper 1/4 cup water 1/4 to 1 tsp. Italian herbs, tarragon, or oregano Drain both cans of garbanzo beans, set aside. Prepare a small frying pan on low heat. Mince onion into tiny pieces; place in pan and allow to sweat and caramelize. While the onions are browning, place 1 can of garbanzo beans, olive oil, lemon juice, salt, pepper, water, and herbs in food processor (preferred) or blender. Turn up stove-top heat and sauté the minced garlic and the other can of garbanzo beans in the butter for two minutes. Allow to cool and then add to food processor. Blend ingredients until smooth and creamy; add more water to thin; add more oil to make more creamy and rich; taste periodically throughout the blending and add salt, pepper, herbs, or lemon juice to taste.
