CRANBERRY AND CARAMEL DATE BARS 
1 1/4 c. cranberries
1/4 c. + 2 tbsp. sugar
2 1/3 c. all-purpose flour
2 c. old-fashioned oatmeal
2 c. packed brown sugar
1/2 tsp. baking soda
1 c. butter, melted
1 1/2 c. dates, chopped
3/4 c. walnuts, chopped
1 c. caramel ice cream topping

In a bowl, combine cranberries and 2 Tbsp. sugar. In a separate bowl, combine 2 c. flour, oatmeal, 1/4 c. sugar, brown sugar and baking soda. Add butter and mix well. Reserve 1 c. crumb mixture and press remaining mixture firmly on bottom of a 9 x 13 inch baking dish.

Bake at 350°F for 15 minutes. Sprinkle with dates, walnuts and cranberry mixture. Mix caramel and remaining 1/3 c. flour. Spoon over fruit and nuts. Top with reserved crumb mixture.

Bake another 20 minutes until golden brown. Let cool and cut into bars.
