FRIED RICE CAKES 
2 beaten eggs
2 c. cold, cooked rice
4 slices bacon, cooked and crumbled
1/3 c. chopped green pepper
1/4 c. Parmesan cheese
2 tbsp. chopped onion
1/8 tsp. salt
1/8 tsp. pepper

Combine eggs, rice, bacon, green pepper, cheese, onion, salt and pepper. Cover and chill 1 hour. Shape into patties (about 1/3 cup each). Fry in hot oil until golden brown.
