FRIED ZUCCHINI CAKES 
1/3 c. Bisquick
1/4 c. Parmesan cheese
1/8 tsp. each salt and pepper
2 eggs, slightly beaten
2 c. coarsely grated zucchini
2 tbsp. butter, butter, or oil for frying

Mix Bisquick, cheese, salt, and pepper in a bowl. Stir in eggs until mixture becomes moist. Fold in zucchini. Heat butter in skillet over moderate heat. Use approximately 2 tablespoons batter for each pancake. Fry 2 to 3 minutes each side until brown. Makes 8 to 10 pancakes.

My Mother-in-law use to make these all the time and since being Gluten Free I finally found GF Bisquick. The cheese kicks up the flavor, add extra. Oh and don't try and mix 3 recipes together, the zucchini makes too much moisture, you have to add more Bisquick, make individual batches. Great flavor, what a treat. Thank You.

Love it! Even my kids ate them (didn't know what the "green stuff" was!). So easy and delicious. I even added a little shredded cheddar to the mix and it worked. Great to make small ones and dip in marinara sauce for snacks or parties!
