FRIED ZUCCHINI CAKES | |
1/3 c. Bisquick 1/4 c. Parmesan cheese 1/8 tsp. each salt and pepper 2 eggs, slightly beaten 2 c. coarsely grated zucchini 2 tbsp. butter, butter, or oil for frying Mix Bisquick, cheese, salt, and pepper in a bowl. Stir in eggs until mixture becomes moist. Fold in zucchini. Heat butter in skillet over moderate heat. Use approximately 2 tablespoons batter for each pancake. Fry 2 to 3 minutes each side until brown. Makes 8 to 10 pancakes. |
