CABBAGE BEEF CASSEROLE 
1 c. long grain rice (uncooked)
1 lb. ground beef
1 onion, chopped
3 carrots, sliced thin
Med. head of cabbage, course chopped
2 1/2 tsp. salt
1/4 tsp. pepper
1/2 c. water
13 oz. can beef broth

Saute' onions in frying pan. Add ground beef, brown and drain. Add chopped carrots and cabbage to ground beef. Season with salt and pepper. (I add a generous dash of "Mrs. Dash"). Put rice in bottom of casserole dish, spread ground beef, carrots and cabbage mixture over rice. Pour water and beef broth over top of mixture. Bake for 1 hour at 350 degrees, covered.
