GROUND BEEF AND CABBAGE
CASSEROLE
 
1 med. head cabbage, shredded
1 1/2 to 2 lbs. ground beef
1 c. chopped onion
6 tbsp. regular (not Minute) rice, uncooked
2 (10 3/4 oz.) cans tomato soup
2 soup cans water

Spread cabbage over bottom of greased large casserole dish. In skillet, brown beef and onion, adding salt and pepper to taste. Drain. Stir in rice. Stir in 1 can of soup and 1 soup can of water. Pour over cabbage; mix well.

In skillet, mix second can of soup with 1 soup can of water. Pour over cabbage- meat mixture; mix well. Cover and bake at 325 degrees for 1 1/2 to 2 hours. Serves 8 to 10.

Been making this for years. We called it St. John's Special from Catholic school. Try adding Bavarian kraut, it's even better.
