BAKED HADDOCK 
2 lb. fresh haddock fillets
2 tbsp. lemon juice
Pepper to taste
1/4 c. melted butter, about
3-4 slices American cheese
1 stack Rita crackers crushed & 1/4 c. melted butter (mix)

Cut fish into serving pieces. Sprinkle with pepper. Melt 1/4 cup of butter and mix with lemon juice. Butter dish, put fish in it and pour butter mixture over it, turn fish to get butter on both sides. Tear cheese and put on fish.

Mix cracker crumbs with the other 1/4 cup butter and spread on top of fish. Bake uncovered 25-30 minutes at 350 degrees..
