CHOCOLATE CHIP OATMEAL COOKIE 
2 c. shortening
2 c. sugar
2 c. brown sugar
4 eggs, beaten
2 c. coconut
4 tbsp. water
2 tsp. vanilla
4 c. flour
2 tsp. baking soda
1 tsp. salt
1 (12 oz.) pkg. chocolate chips

Cream sugar and shortening. Stir in eggs. Dissolve chips in water, add vanilla, and coconut to chips mixture. Mix with sugar and shortening mixture. Mix together flour, salt, baking soda and oatmeal. Add flour mixture slowly, add to rest of mixture. Mix well. Drop by teaspoon on greased cookie sheet. Bake for 10 to 12 minutes at 375 degrees. Can be frozen. Makes 6 dozen.
