ROAST BRISKET | |
3 onions sliced 2 ribs celery including tops diced 1 carrot sliced 3 bay leaves Few drops water 1 clove garlic 1/2 tsp. salt Paprika Preheat oven to 350 degrees. Place onions, celery, carrots and bay leaves in roasting pan. Add water. Rub brisket with the cut clove of garlic and salt. Mince whatever garlic remains and toss into the roasting pan. Sprinkle meat generously with paprika. Roast for 2 1/2 hours but turn the meat over after the first hour. When cool refrigerate. Slice meat thinly. (Purchase uncooked and unseasoned brisket with No Nitrites or Nitrates added.) Use the above recipe for making the Reuben Sandwich. Slices of beef brisket and natural cheese are used in the Reuben sandwich. Sauerkraut is served as a side dish. |
