FRUIT COCKTAIL CAKE | |
2 c. flour 2 tsp. baking powder 1 tsp. vanilla 1 1/2 c. sugar 2 eggs 1 (16 oz.) can fruit cocktail Combine all ingredients. Do not use electric mixer. Put in greased oblong pan (13" x 9 1/4" x 2"). Bake at 350 degrees for 25 to 40 minutes. ICING: Before you put cake in oven mix icing. 1 sm. can evaporated milk 1/2 c. shredded coconut 3/4 c. sugar 1/2 c. chopped nuts While cake is baking cook icing for 1/2 hour, stirring constantly so it does not burn. When icing begins to thicken add chopped nuts and coconut. Spread over cake as soon as you remove from oven. |
