MEAT SAUCE FOR SPAGHETTI OR
LASAGNA
 
3 lbs. lean beef, pork and Italian sausage
2 lg. cans whole tomatoes, boiled
1 lg. can tomato paste
4 cans (16 oz.) tomato sauce
3 tbsp. parsley, chopped
1 onion
5 cloves garlic
2 tbsp. Italian herbs
1 tbsp. sweet basil
Pinch of dry, crushed red pepper
6 tbsp. olive oil
1/4 c. wine
Dash of nutmeg and allspice
Mushrooms if you like, canned or fresh
Salt and pepper
1 onion, chopped

In large pan (8 to 12 quarts) brown meat in 2 or 3 tablespoons of olive oil. Brown sausage in fry pan to remove some grease. Remove meat, brown onion, garlic, parsley, herbs and mushrooms if desired. Saute together and add meat back. add wine. Add boiled tomatoes, tomato sauce, paste and water. Cook at high speed and add 1 tablespoon butter, salt and pepper. Simmer 5 to 8 hours.
