RAISIN SAUCE 
2 tbsp. butter
2 tbsp. flour
1 c. consomme
1 c. white wine
1/2 c. raisins
1 tbsp. grated lemon peel
1 tsp. vinegar
2 tbsp. brown sugar
1/2 tsp. salt

Melt butter in saucepan. Stir in flour and cook until lightly browned. Add other ingredients, cover and simmer gently until raisins are tender and plump (about 15-20 minutes). Serve with ham. Yields approximately 3 cups.
