BLACK BEAN STEW 
1 lb. ground chuck or turkey
1/2 c. chopped onion
1 fresh jalapeno pepper
1 1/2 c. diced potatoes
1 lb. can black beans, undrained
1 lb. can diced tomatoes, undrained
1 c. beef or chicken broth
1 tbsp. chili powder (or more, to taste)

In 4 to 5 quart pot, cook ground meat and onion, drain. Remove seeds, chop pepper and add. Add potatoes, beans with liquid, tomatoes with liquid, broth, and chili powder. Stir well. Simmer 15-20 minutes, until potatoes are done - or longer to cook down like stew.

Serve with a grain product to make a complete protein with the beans. (Legume and grain...)
