HASH BROWN CASSEROLE 
2 lbs. frozen hash browns
1/2 c. butter
2 tbsp. chopped onion
1 can cream of potato soup
1 1/2 tsp. salt
1/2 tsp. pepper
2 c. sour cream
1 c. grated cheese
2 c. cornflakes
1 tsp. parsley flakes

Place hash browns in a 9 x 13 pan. Sprinkle chopped onion over the top. Melt butter and pour over top. Combine soup, salt, pepper, and sour cream. Spread over hash browns. Sprinkle 1 cup grated cheese over top. Next, sprinkle 2 cups crushed cornflakes mixed with 1 teaspoon parsley flakes over the top. Bake at 350 degrees for 55 minutes.
