THREE CHEESE AND BROCCOLI PIE | |
1/2 c. cornmeal 1/2 c. all purpose flour 2 tsp. baking powder 1/2 c. milk 1 egg, slightly beaten 1/4 c. onion, finely chopped 4 eggs, slightly beaten 1 (10 oz.) pkg. frozen chopped broccoli, thawed, drained 1 c. (4 oz.) shredded cheddar cheese 1 c. (4 oz.) shredded Monterey Jack cheese 1/2 c. cottage cheese Heat oven to 350°F. Grease oblong Pyrex baking dish. Combine cornmeal, flour and baking powder. Add combined milk, 1 egg and onion; mix well. Pour into prepared pan, spreading evenly. Bake 10 minutes; set aside. Combine remaining 4 eggs, broccoli and cheeses; spoon over cornmeal base. Bake 45 to 50 minutes or until knife inserted in center comes out clean. Let stand 5 minutes before serving. |

I came to this site hoping for some clarification to the part of the directions that says "add combined milk" but this recipe says the same thing :). I couldn't figure out what it was combined with. I just mixed the milk, egg and onion, and added half a diced jalapeno, dried oregano (not in recipe). My mom was helping me and she accidentally added the cottage cheese to the milk mixture. We just went ahead and baked it as directed. I didn't have cornmeal so I used cornmeal mix and skipped the baking powder. The crust came out quite thick, but very tasty. I think it would have worked better in a bigger baking dish. There was a bit of overflow from the filling as it baked, but I had a piece of foil under my pie plate, so it didn't mess up the oven.
This is a really good recipe, lots of room to tweak and individualize.
