SOUTHERN CUCUMBERS AND ONIONS 
2-3 medium or 2 large cucumbers
1-1/2 cup white vinegar
1-1/2 cup water
1 tsp salt
1 tbsp red pepper
1 medium Vidalia sweet onion

Peel cucumbers, peel onion. Slice cucumber into a large bowl with lid. Dice onion and add to cucumbers. Add vinegar and water to bowl. Add salt and red pepper. Mix well, let stand 1-2 days depending on your preference.

Love the above recipe for cucumbers and onions but I cut the red pepper out completely. Used salt and regular black pepper to taste. The red pepper, especially at l tbsp. was way too spicy. Also need to add sugar..... I used about 4 tbsp. and my husband loved them.

I leave out the water and add extra red pepper and several Thai peppers. I also let it sit for several days to allow the cucumbers and onions to absorb the vinegar and spices.
Red pepper too spicy...please. And sugar would make it disgusting. I do not recommend ruining it with sugar. It's not a dessert.

Just like I remember my aunt in Georgia making with the addition of a bit of sugar to cut the acidity and mellow the flavor of the vinegar and no red pepper.

This is an old dish (without the red pepper)... served almost daily with evening meal. (Was prepared early in day & allowed to marinate.) Often - the replacement would be green onions stacked into a jar upright. Since onions/cucumbers were usually homegrown... it was a simple addition to have daily.
