QUICK BANANA MUFFINS 
Prep time: 5 minutes Baking time: 20 minutes

1 c. any flour (whole wheat, white, etc.)
1/2 c. quick cooking oatmeal
1/4 c. brown sugar
1 tbsp. baking powder
1/2 tsp. cinnamon
1/8 tsp. salt (optional)
1/3 c. milk
1 egg
2 tbsp. cooking oil
1 lg. ripe banana

Preheat oven to 400 degrees F. Mix dry ingredients. Mix or blend wet ingredients well (I use a Braun hand held blender). Stir into dry ingredients until just moistened. Fill muffin pans 2/3 full and bake 400 degrees for 18 to 20 minutes. Makes 10 to 12 muffins, depending on the size of the banana.

I just made these and am very pleased. I used half whole wheat flour and half white all-purpose flour, and twice as much cinnamon, because I love cinnamon. They are moist and yummy!
