ASHLEY'S AMAZING BANANA PLUM MUFFINS | |
1 cup all-purpose flour 1 cup quick-cooking oats 3 tsp. baking powder 1 tsp. salt 3/4 cup sugar 2 tsp. vanilla 1 egg 1/4 cup vegetable oil 1 cup water 1 very ripe banana 2 plums (its OK if they are sour) Preheat oven to 400°F. Mix all the dry ingredients in large bowl: flour, oats, baking powder, salt and sugar. Mix the wet ingredients in a small bowl: vanilla, egg (make sure egg is beaten well), oil and water. Take ripened banana and mash it into the small liquid ingredients. Chop up plums into small pieces (like the size of blueberry). Add plums to wet mixture. Stir the wet ingredients into the dry. If it seems too runny add more oats (up to 1/2 cup). Consistency should be a little runny. Grease muffin tin or use liners. Fill the tins to the top. Bake in 400°F oven for 20 to 25 minutes (my oven tends to be on the warmer side so I do 20). And voila!!! Makes about 2 dozen delicious, fairly healthy muffins! Enjoy! Submitted by: Ashley |
