BANANA-OATMEAL MUFFINS | |
1 c. all purpose flour (may use half whole wheat) 2 tbsp. apple juice concentrate 2 1/2 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. ground cinnamon 1/4 tsp. ground nutmeg 1 c. mashed bananas, approximately 3 bananas 1/2 c. quick cooking oats, uncooked 1/2 c. low-fat milk 2 tbsp. tub butter, melted 1 egg, beaten Combine all dry ingredients. Combine remaining ingredients and stir well. Add to dry ingredients and stir just to moisten. Use muffin papers and fill 2/3 full. Bake at 425 degrees for 15 minutes. Yields 1 dozen. |
