SPINACH QUICHE 
3 eggs
1 c. sour cream
1 tbsp. mayonnaise
1 med. onion, chopped
1 pkg. chopped spinach, thawed
1 9" baked pie crust

Blend together the eggs, sour cream and mayonnaise. Saute the onion and add to the egg mixture, add the chopped spinach. Pour into the baked 9" pie crust. Bake at 375 degrees until filling is set. (Cooked, crumbled bacon bits may be sprinkled on top before baking.)
