EGGPLANT CASSEROLE 
1 large eggplant
1 large diced onion
4 tbsp. grated cheese
1/2 tsp. oregano
Dash of pepper
3/4 c. milk
2 tbsp. butter
1 c. seasoned stuffing

Pare and dice eggplant. Cook in salted water until tender. Drain and mash. Add other ingredients. Place in buttered casserole dish.

Bake at 350°F for 40 minutes.
