REBECCA'S MEXICAN STYLE MEATLOAF | |
1 lb. ground round beef 1 p. ground pork 1/2 pkg. instant mashed potato flakes (or more) 1 cup shredded Mozzarella (or Mexican "fiesta" blend) cheese 2 tbsp. Worcestershire sauce 1 egg, beaten 4 tbsp. taco hot sauce 1 tsp. salt 1/2 tsp. fresh ground pepper 1/2 tsp. garlic powder 1 (4 oz.) can sliced mushrooms, drained (optional) Mix all ingredients with a spoon, just until combined. Don't mash together with your hands. Add more potato flakes if mixture appears too moist. Form into a loaf and place in a greased meatloaf pan or a baking dish. Bake at 350°F for 1 hour. Tent with foil if top browning too much. Remove from oven and let stand for 5 minutes before serving. Submitted by: Rebecca |
