ARTICHOKE SALAD 
1 pkg. UNCLE BEN'S® wild and long grain rice
6 sm. onions, chopped
12 green olives
1/2 green pepper or sweet red pepper, chopped
1/3 c. mayonnaise
1 tsp. hot or mild curry powder
6 oz. jar marinated artichoke hearts

(Use a 16 ounce can if you double). Prepare rice as directed, OMIT butter. Mix onions, olives, and pepper with the cooled rice. Blend together mayonnaise, curry, and marinade from artichokes. Add to rice and vegetables. Chop artichokes and add. Stir vigorously and refrigerate at least 3 hours for flavors to marry.
