RICE ARTICHOKE SALAD 
1 pkg. chicken Rice-A-Roni
4 green onions, sliced
1/2 green pepper, chopped
12 pimento stuffed olives, sliced
2 jars marinated artichoke hearts (6 or 10 oz. each)
3/4 tsp. curry powder
1/2 c. mayonnaise

Cook rice according to package directions, omitting butter. Cool. Add green onions, green pepper and olives. Drain artichoke hearts, reserving marinade. Cut artichokes in half. Combine artichoke marinade with curry powder and mayonnaise.

Add artichoke hearts to rice and toss with dressing. Chill. Easy and delicious. Great for a buffet.
