POPPA JERRY'S BLUEBERRY COBBLER 
3/4 cup all-purpose flour
1/8 tsp. salt
2 tsp. baking powder
1 3/4 cups sugar, divided (I use Splenda)
3/4 cup milk (I use plain soy milk)
1/2 cup (1 stick) butter (no substitutes)
3 cups blueberries

Preheat oven to 350°F.

Sift flour, salt and baking powder together. Mix in 1 1/2 cups sugar. Stir in milk.

Melt butter in 8x8-inch pan. Pour batter over butter. DO NOT STIR! Pour fruit over batter. Sprinkle top with remaining 1/4 cup sugar.

Bake at 350°F for 45 minutes to 1 hour.

Variation: Any cobbler fruit can be used (blueberries, apples, peaches, etc.)
