DIRTY RICE | |
1 lb. ground meat (1/2 liver and 1/2 chuck) 3 tbsp. cooking oil 1 c. chopped onion 1 c. chopped celery 1 lg. green pepper 1/2 c. chopped green onion tops 1/2 c. chopped parsley Salt and pepper to taste 1 c. water 3 c. cooked rice Cook meat in fat in large pot until brown; ad onions, celery and green pepper. Reduce heat and cook until wilted. Add water and all other ingredients except rice. Simmer for about 45 minutes; add more water if needed to keep about same amount of juice started with. Add to cook rice and keep warm until ready to serve. Serves 12. |
