DIRTY RICE CAJUN STYLE (SPICY) 
1 lb. chicken giblets
1 lb. ground chuck
1/4 c. bacon drippings
1 c. chopped onions
1/2 c. chopped green peppers
1/2 c. chopped celery
1/2 c. chopped parsley
2 cloves garlic, crushed
1/2 chopped green onion
2 c. raw rice
Salt, pepper and red pepper to taste

Cook chicken giblets in boiling salted water until tender, grind. Saute ground chuck and giblets in bacon drippings until brown. Add seasonings and continue to cook a few minutes more. Add rice, stir well. Cover and lower heat cook about 45 minutes. Stir after 20 minutes. Take great care so as not to let it burn on bottom of pan stir often if necessary add some chicken broth.
