VEGETARIAN DELIGHT 
2 tbsp. olive oil
2 med. onions, sliced
Handful sesame seeds
1 lb. fresh mushrooms, sliced
1 to 1 1/2 lb. sliced zucchini
4 lg. firm tomatoes, chopped
Salt and pepper to taste
1 c. pitted ripe olives, sliced
1 c. grated Monterey Jack or Cheddar cheese

Heat oil in large skillet, saute onions and sesame seeds a few minutes until golden. Top with layer of mushrooms, then zucchini and tomatoes. Season with salt and pepper. Complete layers using mushrooms, zucchini, tomatoes. Arrange olives evenly over top. Cook, uncovered, slowly, about 20 to 25 minutes.

When vegetables are tender, sprinkle cheese over top. Run under broiler until melted or melt on top of stove by heating. (Electric skillet may be used.) Serve hot or cold.
