VEGETARIAN'S DELIGHT | |
1 c. chopped onion 1/2 c. butter (optional) 3/4 c. canned tomatoes with juice 2 tbsp. tomato paste 2-3 tbsp. lemon juice 1 c. fine, grade bulgur 1 c. boiling water 1/2 tsp. dried basil 1/2 tsp. oregano leaves 2-3 c. chopped fresh vegetables Vegetables - Any of the following combined: Tomato, cucumber, green pepper, green onion, radishes, cauliflower, celery, grated carrots. Mint sprigs for garnish. In a medium pan saute onion in butter or Pam or until lightly browned. Stir in canned tomatoes and juice, tomato paste and lemon juice. Simmer 2-3 minutes longer. Add bulgur, boiling water and herbs. Stir once or twice. Cover. Turn off heat but leave pan on burner for 5-10 minutes or until all the liquid has been absorbed. Transfer mixture to serving platter. Mound fresh vegetables in center. Garnish with mint sprigs and serve immediately. Serves 4. |
