CHICKEN AND BROCCOLI CASSEROLE 
This is a easy dish and tastes great!!

3 or 4 chicken breasts
1 large onion, diced
oil, for frying
1 (22 oz.) can cream of mushroom soup (family size)
1/2 to 1 head of broccoli (frozen can be substituted)
1 box Stove Top stuffing, chicken flavored (or your favorite)
1 (16 oz.) bag shredded cheddar cheese (about 2 cups)
1 to 2 (4 oz. ea.) cans sliced mushrooms, drained

Cut chicken breasts into bite size pieces, cut onions into dices, place both into a frying pan with a little bit of oil and fry till no longer pink. Set aside (do not drain the oil, this will add tremendous flavor).

In a casserole dish (or similar) mix remaining ingredients using 1/2 of the cheese. Add chicken, mix then top with the rest of the cheese.

Bake at 350°F covered for 20 minutes, then bake for 20 to 30 minutes uncovered. Enjoy!
