GAZPACHO WITH AVOCADO 
1/2 cucumber
1/2 red or white onion
1/2 avocado
1/2 tsp. oregano
3 tbsp. olive oil
2 tbsp. wine vinegar
4 c. canned tomato juice
Ice cubes
2 limes

Cut off a few slices of cucumber and onion; save for garnish. Chop rest of cucumber and onion in small pieces. Slice or chop avocado. Put onion, cucumber, avocado, oregano, oil and vinegar in serving bowl. Pour in tomato juice. Top with cucumber and onion slices; chill. Ladle into bowls; add 2 or 3 ice cubes and lime juice to taste. Serves 6.
