CHINESE FRIED RICE | |
2 beaten eggs 3 tbsp. cooking oil 1/2 c. ham, pork or bacon 1/4 c. finely chopped mushrooms 3 tbsp. soy sauce 3 tbsp. thinly sliced green onion 4 c. cooked rice In a 10 inch skillet, cook beaten egg in 1 tablespoon oil without stirring. Let sit. Invert skillet over basking dish or cutting board. Cut into short narrow strips. In same skillet cook meat, mushrooms and 3 tablespoons soy sauce and green onion in remaining oil. About 4 minutes. Stir in rice and egg strips; heat through. Serve with additional soy sauce. |
