FATHER ST. O.'S SALMON LOAF 
1 can red salmon flaked
3 eggs, beaten
2 c. soft bread crumbs
1/4 c. chopped olives (green)
1 tbsp. lemon juice
1/4 c. chopped celery
1 tbsp. minced onion or 1/4 c. chopped onion
1 tbsp. parsley
3 hard cooked eggs

Drain and flake salmon. Combine with beaten eggs, crumbs, celery, olives, chopped onion and lemon juice. Spread half of salmon mixture into loaf pan. Place shelled hard cooked eggs to with remaining salmon mixture. Press down. Bake at 350 degree oven for 35 to 40 minutes.
